La Vedetta

In 2018, work began on "La Vedetta" di Staffarda, the restaurant's personal farm which is located in Pagno immersed in the hills of Val Bronda, not far from the medieval village of Staffarda.

Here is the artisan laboratory where all the products used daily in the restaurant are prepared and available for purchase at the Bar-Enoteca.

Pagno's Oil

The farm resides on the southern side of the valley, thus being able to take advantage of prolonged exposure to sunlight and is sheltered from the elements.

The property has 5 hectares of hilly land where there are different qualities of fruit trees and vegetables such as olive trees and small fruit bushes.

It is from these olive trees that Pagno oil is obtained, cold pressed and used daily in the restaurant's kitchen.
